Not only are they crisp and delicious but also nibbling on raw veggies such as broccoli, celery, carrots and spinach provides a powerful punch of micronutrients, vitamins, antioxidants and fiber! Many studies show that steamed to fully cooked vegetables provide fewer and less absorbable nutrients than raw vegetables provide. That being said, there are always benefits to eating your veggies – cooked or raw!

Let’s take a look at what some of you favorite veggies can offer if you have them raw:
